We’re picturing a large open fire, the gorgeous rolling hills and lochs of bonnie Scotland and a big bowl of this traditional classic to warm our hearts! Our healthy meals will get your child eating well in no time.

Ensure that giblets are removed from chicken.
Place the chicken and the bacon rashers into a large pot and cover with water. Bring the pot to the boil and use a ladel or spoon to remove any waste from the top.
Chop the leeks into pieces around 3 cm long.
Add ¾ of the leeks to the pot, along with the bay leaves, salt & pepper and scotch whiskey (if you’re using it).
Allow to simmer for around 2 hours, adding more water if necessary.
Gently remove the chicken from the pot and cut the meat into small chunks before returning to the pot. Also remove and cut up the bacon into small pieces and return to the pot.
Drain and finely chop the prunes.
Add the rice, prunes, and the remaining leeks, then stir together well, whilst simmering continues for another 3 minutes.
Finely chop the parsley.
Serve, topped with a sprinkle of parsley.
