Kids' Food Recipes: Banana Bread

Kids' Food Recipes: Banana BreadA fantastically simple and deliciously healthy snack that is a real treat. This is one of our favourite kids' food recipes, an integral part of our Food For Kids series.

Makes 1 loaf

Preparation time: around 80 minutes.

Ingredients

  • 1 stick of unsalted butter at room temperature
  • 1 cup of sugar
  • 2 eggs
  • 1 1/2 cups of bread flour or unbleached all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1 cup of mashed very ripe bananas
  • 1/2 cup of sour cream
  • 1 teaspoon of vanilla extract
  • 1/2 cup of chopped walnuts or pecans

Directions

Preheat the oven to a moderate temperature: 180°C (gas mark 4).

Grease a loaf pan with butter. With an electric mixer, cream the butter and sugar until light and fluffy.

Add the eggs, beating well. Sift the dry ingredients together and combine with the butter mixture.

Blend well. Add the bananas, sour cream, and vanilla. Stir well. Stir in the nuts and pour into the prepared pan.

Bake for 1 hour, or longer. Test by pricking gently with a toothpick - when the toothpick comes out clean, the loaf is done.

Turn out onto a rack to cool. Brush with melted butter.
