Fussy Eaters' Chicken Tortilla Wraps

A recipe for fussy eaters that is guaranteed to get your children eating healthily and happily - and wanting more! These delicious chicken wraps are perfect for kids' lunchboxes or to take on days out, and can be spiced up or toned down as much as you like.

Fussy Eaters' Chicken Tortilla Wraps

This recipe is healthy and nutritious, and perfect for lunch or dinner. Kids can customize it however they like, so it's perfect for fussy eaters. It goes well with a number of extra ingredients (see below) and can make some brilliantly light dishes. For an extra energy boost to keep legs running until sunset, try replacing the chicken with a high-fibre meat, like beef.

Preparation time: 10 minutes

Ingredients:

  • 1 onion, finely sliced
  • 1 red pepper, deseeded and cut into strips
  • 2 tablespoons of olive oil
  • 4 chicken breasts cut into pieces (can used precooked chicken)
  • Thinly sliced cheddar cheese
  • 8 flour tortillas
  • ½ iceberg lettuce, finely shredded
  • Tomato salsa
  • Sour cream (optional)
  • Any other vegetables you like, such as courgettes, beans, or even potato.

Method:

  • Wrap tortillas in foil and leave to warm in the oven.
  • Begin to fry the onion and pepper in the olive oil. Once the onion is soft and beginning to brown, add the chicken and stir-fry until the chicken is cooked all the way through.
  • Take a warm tortilla and place slices of cheddar cheese down the middle.
  • Add a generous helping of the chicken mix along the slices.
  • Top with iceberg lettuce and tomato salsa (sour cream optional).
  • Fold over one end of the tortilla before wrapping up to ensure the filling doesn’t escape.
  • Serve, or store in the fridge for later.
Other variations:
  • When making the chicken mix, try adding cracked black pepper to spice things up a little.
  • A dash of lemon juice with some coriander will bring out a whole new side to the chicken, making it tangier. Throw these in when preparing the mix.
  • Add other vegetables to the mix, depending on your mood. Try frying some courgette and aubergine, or some mushrooms. Baking cherry tomatoes and carrots really releases their flavour, or you could boil some green beans for a super-healthy twist.
  • For a really indulgent snack, change the cheddar cheese for some halloumi. Fry it up in small chunks when you make the chicken mix - but don't include too much of it as it can dominate other things.
