Kids' Meals: Crispy Bacon and Halloumi Pittas with Tzatziki

Kids' Meals: Crispy Bacon and Halloumi Pittas with Tzatziki

These pittas are absolutely delicious, filling and healthy. Serve at picnics with the tzatziki dip, as part of a summer lunch, or warm up and surround with roast vegetables for delicious kids' meals at any time. Part of our Healthy Food for Kids series.

Bacon and Halloumi Pittas with Tzatziki

Preparation Time: 15 minutes

Cooking Time: 15-20 minutes (depending on how crispy you like your bacon!)

Ingredients

  • 8 rashers bacon
  • 2 (small) packets halhoumi cheese
  • 4 pitta breads (or 8 small picnic size)
  • ½ cucumber (de-seeded and grated)
  • 30 sprigs mint (shredded)
  • 1 clove garlic (crushed)
  • 4 tsp Greek yoghurt
  • Juice of ½ a lemon
  • Salt and pepper
  • Olive oil

Method

  • Using a char-grill pan, cook the bacon, and move to the oven to keep warm.
  • Cut the halloumi into ½” thick slices and cook on the grill until golden. Keep warm.
  • Mix together the cucumber, mint, garlic and yoghurt. Season the lemon juice with salt and pepper.
  • Heat pittas on the grill or in the toaster. Slit open and fill with tzatziki.
  • Add the halloumi and bacon and serve.

Healthy Tip: Halloumi cheese is very high in fat, but does come in a 'light' variety.
