Heat the oil, and blanch the potatoes for 8 minutes. Remove from oil.
Salt and pepper one side of the steaks and place salt side down in a pan. Put the wedges back into hot oil for & minutes.
Cook the steak for 3 minutes, then salt and pepper the top side, and turn.
Cook for a further 3 minutes (more or less depending on how you like your steak cooked) .
Add the red wine into the pan and any remaining pepper.
Add the cream, reduce the heat, and cook for 30 seconds.
Drain the wedges, season and arrange on four plates.
Serve the steaks next to the wedges, pouring some sauce over the top. (If your sauce has gone too thick, add a splash of water to thin it down).
