These salmon cakes are all about creating sensational combinations of taste that will soon become a favourite in your children's eating habits. They're also a fantastically healthy meal in their own right. Ingredients:
Directions:
Peel and boil the potatoes until they are tender.
Crack one egg into a cup and beat lightly with a fork.
Finely chop the spring onions and half of the leaves of the coriander together.
When the potatoes are done, place them into a mixing bowl, add a teaspoon of butter and a dash of milk then mash together thoroughly.
Break the salmon into flakes as you add it to the mashed potato.
Add the chopped spring onion and coriander, along with the beaten egg, and then stir the ingredients together with a wooden spoon so that the mixture binds together nicely.
Use a large spoon to scoop and shape the mixture into round cakes.
Place onto a plate, cover with cling-film and place into the refrigerator for around 5-10 minutes, whilst you prepare the sauce.
For the sauce:
Finely chop the rest of the coriander and add it to a bowl. Cut the limes and squeeze all of the juice into the bowl. Add some ground salt and pepper, a dash of balsamic vinegar and add olive oil as you mix the ingredients together with a fork.
Put some vegetable oil into a frying pan and heat.
Place the flour into a small bowl. Place the breadcrumbs into another small bowl.
Crack the other egg into a small bowl and beat with a fork.
Take each salmon cake, dip it into the beaten egg then roll it in the flour, followed by the breadcrumbs.
Gently fry each side of the fish cakes for approximately 2-3 minutes until they are golden brown.
Add spinach leaves to a pot of boiling water. Boil gently for around 2 minutes, drain and form a layer of spinach on each plate on which to place the salmon cakes.
Drizzle the lime and coriander sauce over the salmon cakes and enjoy.
