On Christmas Day, everybody has a different tradition for Christmas lunch. Some people go out to a fancy restaurant, some head to their grandparents', some meet up with friends and don't eat Christmas food at all. There are a lot of varied stuffing recipes out on the Internet now, but if you'd like to make your own traditional roast turkey and stuffing this Christmas, here is the proper time-honoured English recipe.

Preparation Time:
2 hours
Serves 4

Ingredients:

10 chestnuts
500 grams (1 lb) sausage meat
85 grams Paxo Sage & Onion Stuffing
2 tsp salt
pepper to taste
260ml (9 fl oz) water

Method:

  • Boil the chestnuts in a pot of boiling water for an hour until they are soft.
  • Take them out and peel them. The easiest way to do this is to cut a cross on the base of the chestnut and puncture the skin so that you can peel it off easily.
  • Chop the peeled chestnuts into tiny pieces.
  • Mix the sausage meat and chestnuts together in a bowl.
  • Add the Paxo Sage & Onion stuffing to the bowl, together with the 260 ml of water, salt and pepper.
  • Stir thoroughly.
  • Preheat the oven to 180 degrees C (350 degrees F).
  • Stuff the turkey with half of the stuffing and put it into the oven.
  • For crispy stuffing, place large balls of stuffing onto a greased baking tray and place in the oven on a row beneath the turkey.
  • Cook the stuffing on the separate baking tray for 45-55 minutes.
